DRIED FISH (Norwegian: «tørrfisk») is cod that has been air-dried on wooden racks in Norway for centuries, exposed to cold wind without salt or additives. Over several months, it transforms into a dense, rich product that can be stored for years and forms the foundation of Scandinavian cuisine.
